Bitter melon, also called karela, is a nutritious vegetable packed with antioxidants, vitamins, and minerals. Used in Indian and Asian cuisines, it’s enjoyed in curries, stir-fries, juices, and stuffed preparations despite its distinct bitter taste.
3 thinly sliced bitter melons (karela) 2 sliced onions 2 chopped tomatoes 2 slit green chillies 1 tsp turmeric powder 1 tsp red chilli powder 1 tsp coriander powder ½ tsp cumin seeds Salt to taste 2 tbsp oil
Slice bitter melon thinly and rub with salt, set aside for 20 minutes, then squeeze out excess water to reduce bitterness.
Heat oil in a pan, add cumin seeds, onions, green chillies, and sauté until golden.
Add tomatoes, turmeric, chilli powder, coriander powder, and cook until the tomatoes soften.
Mix in bitter melon slices and cook on medium flame until tender.
Adjust salt and serve hot with roti or dal-rice.
