Fueling your morning with a nutritious meal does not require complex baking techniques or dozens of pantry items. These four-ingredient breakfast muffins rely on whole food staples like ripe bananas, rolled oats, eggs, and protein powder to deliver a clean balance of fibre and complex carbohydrates. Naturally sweet and naturally gluten-free when using certified oats, they bake into portable, soft-baked cakes ideal for busy weekday routines. Making a batch ahead of time ensures you have a wholesome bite ready to grab before heading out the door.
2 large ripe bananas, mashed  1.5 cups rolled oats  2 large eggs  1 scoop (approx 30g) vanilla or unflavoured protein powder
Preheat your oven to 180 degrees Celsius and grease a six-cup muffin tin with a little oil or line with paper cups.
Mash the ripe bananas in a large mixing bowl using a fork until smooth and liquidy.
Whisk in the eggs until fully combined, then stir in the rolled oats and protein powder until a thick, even batter forms.
Spoon the batter evenly into the six muffin cups and bake for 15 to 18 minutes until the tops are golden and a toothpick inserted into the centre comes out clean.
