For any spread on bread, butters are perfect, but an almost sweet layer of mango jam in the summers sounds just about excellent, doesn't it? You do not need to buy the jam; you can easily make it at home. Here is a super quick recipe!
1 kg ripe mango ½ cup granulated sugar ¾ cup water ¼ cup lemon juice
Peel the mangoes and chop them into small pieces. Remove the pit and fibrous part. Set aside.
In a large saucepan, add the sugar and water. Let the sugar dissolve slowly.
Add the chopped mangoes. Bring the mixture to a gentle simmer on medium heat.
After 15 minutes, add the lemon juice and allow the jam to set. Continue to cook for another 10 minutes.
Using a potato masher, break down the chunks of mangoes left. Once thick, remove from heat and cool.
Store in airtight jars and use on breads, rotis and more!
