Lotus Biscoff biscuits have a caramelised taste that works perfectly for quick homemade desserts. This 4-ingredient Biscoff cake turns the biscuits into a soft dessert that only uses basic pantry staples such as milk, baking powder and Biscoff spread, making it an easy option when you want to bake a cake that does not need a long list of ingredients.
200 g Lotus Biscoff biscuits 1 cup milk 1 tsp baking powder 3 tbsp Lotus Biscoff spread
Break the Biscoff biscuits into fine pieces with the help of a mixer or rolling pin. A finer texture will help in making a smoother batter.
Transfer the biscuit powder into a bowl, slowly add milk to it and mix until smooth. Mix in the baking powder so the cake rises evenly.
Take a small cake tin, grease or line it with baking paper and pour the prepared batter into it. Tap gently to release the air bubbles before baking.
Bake at °C for about 20–25 minutes, checking with a toothpick. If it comes out clean or has a few dry crumbs, the cake is baked through.
Warm the Biscoff spread until you get a pourable consistency, then drizzle it over the cooled cake. Let the topping settle, then slice and serve.
