Making soft rotis without using wheat may sound tricky, but this 3-ingredient gluten-free version keeps it simple, is quick to make, and also useful, making it perfect for everyday meals when you want to have something light and easy.
1 cup rice flour ¾ cup hot water Salt to taste
Gently boil the water, and using hot water helps in binding the rice flour better, and makes the dough soft and easy to shape.
In a bowl, mix rice flour and salt, and slowly pour the lukewarm water over it to knead a soft dough.
The dough should feel smooth, soft, and not sticky. Cover and keep it for rest for a few minutes.
Divide the dough into small equal balls, flatten each ball gently between your palms or roll with soft hands with the help of a rolling pin.
Place the roti on a hot pan and cook on medium heat. Flip it once or twice until you see the light brown spots appear, and the roti gets cooked evenly.
Remove from the pan and serve instantly with sabzi, dal, or even simple chutneys.
