Need a lunch that feels filling and is quick to make? Paneer fried rice incorporates protein-rich paneer with colourful vegetables and rice, making a satisfying office lunch that can be prepared quickly and tastes just as good as freshly made.
2 cups cooked rice (cooled) 200 g paneer, cubed 1 tbsp oil ½ cup carrot, finely chopped ½ cup capsicum, finely chopped ¼ cup spring onion, chopped 2 cloves garlic, minced 1 tsp soy sauce ½ tsp black pepper ½ tsp salt 1 tsp sesame seeds (optional)
If you have a day-old rice, you can use that, as it works best for the fried rice; else, make a fresh batch.
In a pan, heat oil and lightly sauté paneer cubes until they turn golden on the edges.
To this, add garlic, carrots, and capsicum and stir-fry on high heat for a few minutes so that the vegetables remain colourful and maintain their crunch.
Now, add cooked rice, soy sauce, salt, and black pepper to this and toss them gently.
Mix in some spring onions and sesame seeds to add freshness and a light nutty flavour.
Let the fried rice cool a bit before packing so that it remains flavourful for hours. Pair it with a bowl of curd to make a hearty meal.
