Soft oyster mushrooms sear in garlic butter until lightly crisp and deeply flavourful. A quick pan recipe that brings bold texture and warmth, ideal for piling over toast or serving straight from the skillet.
250 g cleaned and not torn oyster mushrooms 2 tbsp butter 1 tbsp olive oil 4 chopped garlic cloves ½ tsp chilli flakes ½ tsp black pepper Salt to taste 1 tsp lemon juice 1 tbsp chopped parsley
Heat olive oil and butter in a wide pan until lightly bubbling, ensuring even coating for mushrooms.
Add garlic and sauté briefly until aromatic, avoiding browning so the flavour stays balanced.
Toss in oyster mushrooms and cook on high heat without overcrowding, letting edges caramelise.
Season with salt, pepper, and chilli flakes; continue cooking until mushrooms shrink and turn slightly golden.
Finish with lemon juice and parsley, toss once more, and serve immediately while hot.
