Tehri is a popular vegetarian rice dish from the Indian state of Uttar Pradesh. It is made by cooking basmati rice with a variety of vegetables and aromatic spices.
1 cup of rice 2 tablespoons of oil 1 teaspoon of cumin seeds 2-5 cloves 1 inch cinnamon sticks, as needed 1 bay leaf 1 chopped onion 1 teaspoon of garlic-ginger, chopped 1 chopped carrot ½ cup of green peas 1 chopped potato ½ teaspoon of turmeric powder ½ teaspoon of powdered chilli ½ teaspoon of garam masala Salt per taste Water as needed Chopped coriander, for garnish
Soak the basmati rice for 30 minutes. In a pan, heat oil. Add bay leaf, cloves, cinnamon and cumin seeds. Sauté on low heat.
Add the ginger-garlic and chopped onions, and cook until golden brown. Add the chopped vegetables such as potatoes, carrots, and peas. Let it cook.
Add salt, garam masala, red chilli powder, and turmeric powder. Then the soaked rice to the pan.
Gently stir to incorporate the spices into the rice. Pour the water. Let it boil.
Lower the heat, cover the pan, and cook for 15 to 20 minutes. Serve tehri garnished with coriander leaves and raita on the side.
