Looking for a quick breakfast? This recipe is meant for speed without drying the egg. Mayonnaise adds moisture and fat, helping the egg cook evenly in the microwave. The result is soft and spoonable.
1 egg 1 tbsp mayonnaise Salt and pepper to taste
Whisk egg, mayonnaise, salt, and pepper in a microwave-safe bowl.
Microwave on high for 30 seconds.
Stir and microwave for another 10–15 seconds if required.
Rest briefly and eat warm on toast or on its own.
