1 Hour Winter Tehri With Uttar Pradesh’s Seasonal Veggies

Tehri is a popular vegetarian rice dish from the Indian state of Uttar Pradesh. It is made by cooking basmati rice with a variety of vegetables and aromatic spices. Make this flavorful one-pot meal, which is not only delicious but also nutritious, as it is packed with the goodness of vegetables.

Ingredients

1 cup of rice 2 tablespoons of oil 1 teaspoon of cumin seeds 2-5 cloves 1 inch cinnamons sticks, as needed 1 bay leaf 1 chopped onion 1 teaspoon of garlic-ginger, chopped 1 chopped carrot ½ cup of green peas

Ingredients

1 chopped potato ½ teaspoon of  turmeric powder ½  teaspoon of  powdered chilli ½ teaspoon of garam masala Salt per taste Water as needed Chopped coriander, for garnish

Step 1

Soak the basmati rice for 30 minutes.

Step 2

In a pan, heat oil. Add bay leaf, cloves, cinnamon and cumin seeds. Sauté on low heat.

Step 3

Add the ginger-garlic and chopped onions, and cook until golden brown. Add the chopped vegetables such as potatoes, carrots, and peas. Let it cook.

Step 4

Add salt, garam masala, red chilli powder, and turmeric powder. Then the soaked rice to the pan.

Step 5

Gently stir to incorporate the spices into the rice.

Step 6

Pour the water. Let it boil. Lower the heat, cover the pan, and cook for 15 to 20 minutes.

Step 7

Serve tehri garnished with coriander leaves and raita on the side.
