Ingredients for Vermicelli & veg broth Recipe

  • 20 g Toasted vermicelli
  • 30 g Carrot diced
  • 20 g cabbage chopped
  • 30 g Pokchoy
  • 30 g Cauliflower florets
  • 30 g Spring onions greens
  • 10 g Butter
  • 5 g Garlic Chopped
  • 10 g Coriander stems
  • 5 g Sambal oelek chilli Sauce
  • 5 g Ginger chooped
  • 5 g lemon leaf
  • 1 Tablespoons Rice vinegar
  • 1/2 g Black pepper
  • To Taste Himalayan salt
  • As Required Water or stock
  • As Required For Ganishing Sesame oil
  • 1 Tablespoon Light soy
  • As Required For Ganishing Tender coriander sprigs- to garnish

Directions: Vermicelli & Veg Broth Recipe

  • STEP 1.Add butter to the stock pot on a medium flame,
  • STEP 2.Once melted, add in ginger,garlic, lemon leaf, spring onions and coriander stems and saute it until the flavours are released.
  • STEP 3.Add in the chopped vegetables, vinegar, Sambal oelek chilli sauce and saute for 30secs and add soy sauce, water/stock, vermicelli.
  • STEP 4.Season the stock as per your taste and let it simmer until the vegetables and vermicelli are cooked to a bite.
  • STEP 5.• Over cooking of the vegetables is not advisable as it loses the texture, color & nutrition.
  • STEP 6.• Do not boil the stock as it may turn it cloudy and visually unappealing.
  • STEP 7.In the end, turn off the gas and garnish your broth with a drizzle of sesame oil & fresh coriander sprigs.
