  • 100 grams Flour
  • 12.50 grams Oil
  • 0.13 cup Besan
  • 1/4 cup Washed Moong Dal
  • 0.06 cup Urad Dal
  • 0.38 tbsp 1 1/2 tbsp
  • 1/4 tsp Garam masala
  • 1/4 tsp Fennel
  • 1/4 tsp Cumin
  • 1/4 tsp Turmeric powder
  • 1/4 tbsp Coriander powder
  • to taste Salt
  • 1/4 tbsp Amchur powder
  • 1/4 tbsp Kasoori methi
  • 0.13 tsp Asafoetida
  • 0.06 tsp Baking soda
  • 1/4 Litre Oil for frying

How to Make Rajasthani Mogar Kachori Recipe

STEP 01

First of all, mix 50 grams of oil in maida and knead a flexible dough with lukewarm water and keep it covered.

STEP 02

Wash the moong and urad dal in water and soak it for 1 hour.

STEP 03

Now to make the masala, first heat two spoons of oil in a pan and add fennel and cumin seeds and fry the gram flour well.

STEP 04

Roast almost enough that the color of the gram flour changes completely and turns brown.

STEP 05

Now take out the water of the lentils that we had soaked and mix it in the gram flour.

STEP 06

Now add all the spices in it and fry the mixture well on medium flame for about 15 minutes.

STEP 07

Mix some water in asafetida and mix it in the mixture. This will make the kachori very tasty.

STEP 08

Now take off the spices from the flame and cool them down.

STEP 09

When the masala cools down, add 1/4 tsp baking soda and kasoori fenugreek and mix it well.

STEP 10

Make small balls of the prepared mixture.

STEP 11

Now break small balls of maida, flatten it a little with your hand, fill the masala and seal it well and flatten it by pressing a little with your palm. Prepare all the kachoris in the same way

STEP 12

Now heat oil in a pan, keep the flame of oil very low.

STEP 13

Now put the prepared Kachori in the oil one by one on low flame, do not stir them at all when it will be fried and will come up on its own.

STEP 14

When it comes up, increase the flame a little and turn all the kachoris once, then take them out with the help of a jar when they become golden.

STEP 15

Our delicious hot Kachori is ready, enjoy the prepared Kachori with green chutney, sweet chutney.
