STEP 1.In a bottom pan take 1 litre full fat milk and cook till 1/3 of it is left. Transfer 3/4 mixture of rabdi in a bowl. Add 1/2 cup refined flour into the rabdi mixture and stir it continously for 10 minutes. Add 2 tbsp milk to the rabdi mixture and cover it. Let it rest for 20 minutes. Add 1 tbsp sugar and 1/4 tbsp cardmom powder in 1/4 th part of rabdi mixture. For sugar syrup add 1/2 cup water and sugar to the pan stir continously. After one boil add a pinch of saffron strands to the sugar syrup. Cook for 5 minutes on medium flame. Sugar syrup is ready. Heat 1/2 cup of ghee on low flame and pour malpua batter with the help of big spoon. Fry malpua on medium flame till it turn into golden brown in colour. Transfer malpua in luke warm syrup and let it soak for 5 minutes. Serve hot malpua with rabdi on plates and garnished with some chopped pistachios. Delicious malpua with rabdi is ready to taste.
