Mixture in south India means varieties of savouries mixed together. This yummy snack is always made for diwali & alike special occasion. I tried making this earlier once but failed terribly in making boondis which are a must in Mixture. But this year tried again & happy with the outcome. Being a passionate home chef i consider this as victory & this gives me courage to try few other dishes in bucket list.

Ingredients for Mixture Recipe

  • 0.19 cup Chickpea flour
  • 1/20 cup Groundnuts
  • 1/100 cup Curry leaves
  • as required Salt
  • 1/10 tbsp Red chilli powder
  • 1/20 tbsp Turmeric
  • 0.03 cup Thick poha
  • 1/10 tsp Cumin powder
  • 1/20 tsp Hing powder
  • 0.03 tsp Sesame seeds
  • 0.03 tsp Cumin
  • 0.07 tbsp Butter
  • as required Oil
  • 0.06 cup Rice flour
  • 1/25 cup cup roasted

Directions: Mixture Recipe

  • STEP 1.Making thick & nylon sev...
  • STEP 2.Take 1.5 cup chickpea flour in a bowl.
  • STEP 3.Add salt, 1 tsp redchilli powder , ½ tsp turmeric ½ tsp cumin powder , 2 tbsp oil.
  • STEP 4.Give a good mix.
  • STEP 5.Add water little by little.
  • STEP 6.Knead into a med. soft dough.
  • STEP 7.Cover & rest for 5 min.
  • STEP 8.Devide into 2 parts.
  • STEP 9.Knead well again.
  • STEP 10.Fill into a mould with thin/nylon sev plate.
  • STEP 11.Close the lid.
  • STEP 12.Press the sev into hot oil in pan.
  • STEP 13.Fry on med. flame till crisp.
  • STEP 14.Romove into a bowl.
  • STEP 15.Fill remaining dough into mould fixed with thick sev plate.
  • STEP 16.Fry this too flipping the sides till crisp.
  • STEP 17.Making ribbon pakoda...
  • STEP 18.Powder 2 tbs roasted gram.
  • STEP 19.To this add ¼ cup rice flour & ¾ cup chickpea flour.
  • STEP 20.Add salt, ¼ tsp turmeric , ¾ tsp red chilli powder ,½ tsp cumin powder, sesame seeds & 1 tbsp oil.
  • STEP 21.Mix well.
  • STEP 22.Add water & make med. soft dough.
  • STEP 23.Cover & rest for 5 min.
  • STEP 24.Fix the mould with ribbon pakoda plate.
  • STEP 25.Press the pakoda directly into hot oil.
  • STEP 26.Fry flipping sides till golden & crisp.
  • STEP 27.Remove & add with sev.
  • STEP 28.Making butter chakkuli...
  • STEP 29.Powder 2 tbsp roasted gram.
  • STEP 30.Mix this with ¾ cup rice flour, salt , 1 tsp red chilli powder , ¼ tsp turmeric , butter, cumin.
  • STEP 31.Mix well.
  • STEP 32.Make med.soft dough adding water.
  • STEP 33.Cover & rest for 5 min.
  • STEP 34.Fix the mould with chakkuli plate.
  • STEP 35.Fill the dough & press chakkuli into hot oil.
  • STEP 36.Fry flipping sides till golden.
  • STEP 37.Add to other savouries.
  • STEP 38.Making boondi...
  • STEP 39.In a bowl combine together 1.5 cup chickpea flour , ½ tsp hing, ½ tsp turmeric ,salt, ¾ tsp red chilli powder , 1.5 tbsp rice flour & 2 tbsp oil.
  • STEP 40.Add water & make thick batter.
  • STEP 41.Heat oil & drop boondis through perforated ladle.
  • STEP 42.Fry till crisp & add with other savouries.
  • STEP 43.Now fry poha little at a time till they bloom & crsip.
  • STEP 44.Add with others.
  • STEP 45.Also fry groundnuts , remaining roasted grams, curry leaves till crisp.
  • STEP 46.Now mix everything well.
  • STEP 47.Break the sev, chakkuli & ribbon pakoda into pieces.
  • STEP 48.Add remaining red chilli powder & cumin powder .
  • STEP 49.Give a good mix.
  • STEP 50.Tasty crispy mixture is ready to enjoy.
