How to Make 3 Ways Nagaland Style Fresh Bamboo Shoots Recipe

STEP 01

Burn khar bark (amla) till it turns into ash. This is a natural soda. Remove the mature shoots of the fresh bamboo shoots and wash the inner tender shoot. Cut the woody parts of the shoot. Wash it 2 to3 times to remove all the plant hairs.

Cut the tender shoot into thin lengthwise slices.

1 place the bamboo shoot slices in a seasoned earthen pot and cover with a few tbsp of khar ash. Fill water in the pot upto the level of the shoots.

2 cover and keep for a day in warm areas, in a cooler climate keep it for upto 2 or 3 days.bamboo shoots are acidic and the alkaline nature of the khar ash lowers this acidity and gives it a unique taste.

3 after a day, add 1 tbsp schezwan peppercorns and 2 slit green chillies. Cover and boil on a wood fire till the bamboo shoot is tender. Remove from the boiling water and serve.

1 another method of preparing tender bamboo shoot, is to add the bamboo shoots in an earthen vessel, add 2 to 3 slit green chillies, 1 tbsp roughly pounded roasted schezwan peppercorns. Add water till the level of the bamboo and add 1 tbsp salt.

2 cover and cook over a wooden fire till the bamboo shoots are tender. Remove from the boiling water and serve.

1 a third method of cooking fresh bamboo shoot, is to grill 1 whole tomato on the hot coals till the skin splits and similarly grill 4 to 5 green chillies.

2 in a mortar and pestle, grind 2 cloves of garlic, the grilled green chillies and the grilled tomato. keep aside.

3 roughly pound a few pieces of fresh bamboo shoot and add it to the tomato chilli and garlic chutney. Mix together. Serve.
