The land of warriors and desert, Rajasthan is known for its majestic forts, pristine gold deserts and a rich cultural history. But to a foodie like me it is also the land of fiery laal maas, irresistible pyaz kachoris, wholesome dal bati, Jodhpuri mirchi vada and dainty ghevar. The cuisine of Rajasthan has a heavy influence of the royalty of Rajputs who ruled the land for centuries. Besides the climate of the state is another factor that has influenced the origin of many local delicacies. Most of the dishes of the cuisine are high on spice, and packed with many healthy ingredients. 


Rajasthani Recipes For Breakfast


A typical Rajasthani breakfast is a regal affair, that one simply can’t miss. Since Rajasthan is often dubbed as the birthplace for kachoris, it offers a whole lot of variety to savour in breakfast. Pyaz kachori is one of the most popular from the lot as fried delicacy is prepared with a filling of delicious onions, potatoes and heart-warming spices. Besides, one can also noosh upon moong dal puri with some yummy aloo ki sabzi. Pair some mirchi vadas with garlic chutney and you’ll know what food coma feels like. 


Rajasthani Recipes For Lunch


There is a magnificent range of Rajasthani dishes out there for a wholesome lunch meal. From dal baati churma to gatte ki sabzi, pair these with bajre ki roti. Or droool over Rajasthani Kadhi with some rice. There's also rabode ki sabzi that you can try, which is basically made with buttermilk and makai.

Hot, tempting and fiery lal maas the definitely one of our first choices for dinner, and it should be for you too if you are a non-vegetarian. Another amazing delicacy is the chicken banjara curry, which is made with succulent chicken chunks dipped into a fiery gravy of onion, tomato and a host of spices. For the vegetarian course, one can always go for the dishes mentioned for lunch.

From Alwar's popular milk cake (kalakand), to ghevar and mawa kachori, Rajasthanis never going to disappoint you when it comes to sweets. There’s malpuas in Pushkar too after all. Did you know that sweets in Rajasthan are not meant for an after-meal affair? Instead, they are served along with the main meal. So you can often find Rajasthani enjoying mawa kachoris or malpuas along with gatte ki sabzi.
