Odia Recipes For Breakfast


Dahi Bara-Aloo Dom is special Odia breakfast that is rare to find in other regions. Vada is slathered over yogurt and chutneys, to make the dish more edgy a hot portion of aloo dom is added on top. The sweet and spicy flavours spell magic together. Other popular breakfast staples are Atta Chakuli or Puri Upma. Odias believe in being fully satiated before starting the day and the philosophy reflects in the recipes too.  


Odia Recipes For Lunch


Rice is a staple, seldom will you find roti in a qunitessential Odia spread. If you are looking for a light, comforting meal, go for a wholesome portion of pakhala bhat (rice and water kept overnight, tempered with spices), dalma (dal cooked with vegetables like raw papaya, pumpkin etc), ghanta tarkari (mixed green vegetable comprising a medley of veggies such as ridge gourd, lima beans, sweet potatoes, dal, raw bananas etc) and sajana saaga or drumstick leaf fry. If you want to turn it up a notch, go for Maccha besara (fish in hot and pungent mustard-based gravy), mansa tarkari, chuna macha bhaja etc.  


Odia Recipes For Dinner


For dinner, the fare is pretty much the same, it is upon you to make it as rich and or as mellow as you want. Some interesting ideas would be Dalma, Potala Rassa (a spicy, runny gravy made with pointed gourd or parwal), Dahi Maccha (Fish cooked in tangy, curd-based gravy) and loads of bhajas.
