We, however, have decided to celebrate this day with the famous potato salad. And what’s not to love about it? You may toss some eggs in this salad, or eliminate it. You may combine some celery, onions and mustard to add some bold flavours into this potato salad too. Whatever you decide to do is upto you. Here’s the recipe — 

INGREDIENTS 

- 2-3 potatoes, boiled  

- 1 tablespoon sour cream 

- 1/2 tablespoon fresh herbs (rosemary, dill, oregano)  

- 2 celery stalks, chopped 

- 1/4 cup mayonnaise 

- 2 hard-boiled eggs, chopped 

- 1/2 cup onions, chopped 

- 1/2 tablespoon mustard  

- A pinch of salt, to taste 

- A pinch of pepper, to taste

METHOD  

- Peel the skin of the potatoes.  

- Chop the potatoes into cubes.  

- In a mixing bowl, combine mustard, mayonnaise, sour cream, chopped celery, salt and pepper.  

- Add the potatoes.  

- Mix properly so the dressing coats the potatoes.  

- Now, add hard-boiled eggs, fresh herbs and onions to the salad. Serve.
