Given the current situation, it is encouraged to include citrus fruits in your diet. What’s a better way than to use lemons for a nice three course Sunday meal? Starting from the appetizer, to the main course and dessert, make lemons the star ingredient of each dish. This is will give you the required citrus intake and be a fun way to learn the various shades of something as simple as lemon.  

Here are a few easy ideas for what your three course lemon meal can consist of. 

1. Tzatziki

Let’s keep the starters light. You don’t have to do something lavish. Simply prep for a creamy yet tangy lemon dip that can work well with freshly sliced veggie sticks like cucumbers, carrots etc. and pita bread too. Make a refreshing Tzatziki dip that consists of some Greek Yoghurt, parsley and lemon. This is easy to make and is ready within minutes.

2. Lemon Pepper Chicken

Lemon Pepper Chicken is perfect idea for a filling and healthy main course, that is nutritious and tasty. Make a quick marinade by mixing some freshly chopped coriander, salt, crushed black pepper, lemon juice along with some olive oil. Slit the chicken breasts and brush the marinade on it nicely. Bake/Grill it after 10-15 minutes of marination. Flavourful yet light lemon chicken is ready.  

3. Lemon Blackberry Trifle  

This is a quick and fresh dessert recipe using lemons. You’ll need to mix some lemon yoghurt and lemon pie filling (you can either make it at home or buy it from the market). Then choose your trifle jar/bowl. Start layering with a cake slices then some lemon mixture and some blackberries. Make as many layers as you want. On the top, whipped cream along with some blackberries, lemon and mint for garnish would look great.
