Preparation time- 5 minutes

  • 1 kg whole wheat flour
  • ¼ cup soy sauce
  • ½ onion, chopped
  • 1 tbsp miso paste
  • 1 medium tomato, chopped
  • 2 cloves garlic
  • 2 tsp vegan chicken spice 
  • 1 tsp onion powder 
  • 1 tsp garlic powder
  • 1 tsp black pepper powder 
  • 1 tsp salt


  1. Add flour and water in a bowl to form a dough. Place the dough in a bowl and cover it in cold water for about 6-8 hours. 
  2. After the mentioned time, knead the dough and rinse until water runs clear. 
  3. Squeeze the dough and release as much water and air as possible. Cut it into bite-size pieces.
  4. Add water, soy sauce, chopped onions, miso paste, tomatoes, garlic, onion powder, garlic powder, black pepper and salt into a pot and bring to boil. 
  5. Drop the wheat gluten pieces and cook for about 30-40 minutes till the broth is absorbed and reduced to half. 
  6. Discard the chopped onions and tomatoes and store the Seitan in a container for about 3-4 days for further use. 

If you want to use the Seitan immediately, you can drain the broth and saute the pieces in oil and use it in any gravy or stir-fry with desired spices.
