Samke Harra is usually made for auspicious occasions and family gatherings. It consists of roasted fish served with walnuts and hot tahini sauce.

Samke Harra can be eaten as a sandwich or served on the platter as a main course. It is suitable for a nice lunch when there are people around. You can get Samke Harra in different places in Lebanon and abroad and this is honestly the best fish recipe ever. 


Olive oil

1 large fish

1 cup of tahini (sesame paste)

6 garlic minced cloves

¼ cup of roasted almonds and pine nuts (  peeled and sliced )

½ cup of crushed walnuts

2 cups of water

Lemon slices

1 thinly sliced green pepper

2 tsp of  diced hot pepper

1 cup of lemon juice

Salt and mixed spices to taste

1 cup of finely chopped coriander


  • To cook the fish, clean it, rub it with salt and mixed spices, then pour olive oil. Fill the fish with thin slices of lemon and wrap in foil.
  • Place the fish in a pan with a little water in a hot oven for about 40 minutes or until cooked through.
  • Mix tahini with lemon juice and 2 cups of water in a saucepan. Add coriander, garlic, chopped nuts, paprika and olive oil. Season with salt and mixed spices.
  • Place the pan over medium heat and cook, stirring occasionally, until the sauce turns black and the olive oil appears.
  • Remove the fish from the oven, place it straight on a serving platter and let the meat rest.
  • Pour in the sauce and garnish with toasted almonds, coriander,  pine nuts and lemon slices.
