The roasted eggplant recipe can be a perfect side dish for dinner. You can easily cook this dish with a little bit of preparation. Learn how to cook roasted eggplant in 30 minutes. 


  • 4 tablespoon olive oil
  • 6 Eggplants
  • ½ teaspoon turmeric
  • 1 teaspoon chilli powder ( skip, if you don’t like chilli taste )
  • 2 teaspoon smoked paprika
  • 3 teaspoon coriander
  • salt and pepper to taste
  • A handful of fresh parsley to garnish


  • Preheat the oven to 400 degrees F.
  • Wash and dry the eggplants gently, then cut them in half. Cut the half into 4 or 6 slices. 
  • Place the eggplant slices in a pile on a baking tray lined with parchment paper. 
  • Take a bowl, combine the olive oil, smoked pepper, turmeric, coriander and chili to make the sauce. Then pour this sauce over the eggplant slices.
  • Mix the eggplant with your hands or a spoon so that the slices are well covered with the sauce. Make sure to evenly coat each slice with the sauce.
  • Now, bake at 400 degrees F for 20-25 minutes. 
  • Place the oven on low heat and flip the eggplant slices to roast for another 2-3 minutes or until slightly crispy.
  • Remove the roasted eggplant from the oven and season it with salt and pepper.
  • Garnish it with fresh parsley.
