If you are, then here’s a lesser-known culinary gem of Kerala. The dish is called Boli and is basically a flatbread with a chana dal filling. Does anything else come to your mind while reading the description? We know it's Maharashtra’s Puran Poli but Kerala’s Boli is different than it as the outer filling is made with maida instead of whole wheat flour or atta in Puran Poli. Preparation time- 30 minutes

Cooking time- 10 minutes

Servings- 10-12 


For the dough

  • 1 cup all-purpose flour/maida 
  • 1 tsp turmeric powder 
  • ¼ cup gingelly oil/vegetable oil 
  • Water, according to the requirement

For the filling

  • 1 cup chana dal 
  • 1 tsp turmeric powder 
  • 1 tsp cardamom powder 
  • 1 tsp nutmeg powder 
  • 1 cup sugar 
  • Water, as required 

Other ingredients

  • ½ cup rice flour 
  • ½ cup ghee


  1. Rinse the chana dal under running water and cook it in a pressure cooker till it's just cooked. Be careful to not overcook it. 
  2. In a bowl, combine all-purpose flour, turmeric powder, and water and knead to form a sticky dough. Cover the dough with gingelly/vegetable oil and keep aside for 30 minutes. 
  3. Cook the chana dal with sugar, turmeric powder, cardamom powder and nutmeg powder till it's mushy. Allow the mixture to cool completely and divide it into 10-12 medium-sized balls. 
  4. Take a medium-sized dough ball and place the chana dal mixture ball in the center. Form a ball by pressing the edges of the dough ball towards the center. 
  5. Roll these dough balls with rice flour. 
  6. Heat a tawa and cook the dough circles by flipping continuously and adding ghee in intervals. 
  7. Remove them from heat and serve. 

You can have these Bolis with any chutney on the side. Make it for breakfast for a filling, healthy and wholesome meal.
