Deriving its name from its own cooking technique, Huli in Hawaiian means to turn. As a matter of fact, these grilled chicken pieces were actually turned over multiple times on the grill before they were ready to be served. The brainchild of a businessman from Honolulu, Ernest Morgado concocted a super spicy sauce for his grilled chicken which also happens to be the star of this dish.  

Curious about the great sauce? He made this magic sauce by putting together some pineapple juice, brown sugar, ketchup and soy sauce and it is just a perfect balance, neither too thick nor too sweet. Well, we should thank his mother’s teriyaki sauce recipe for that then. The grilled chicken owes its aroma to the pineapple and the taste to the stir-fry consistency of the sauce.  

The dish sounds so exotic that you are worried if you can try it? We have good news. The ingredients are easily available in your pantry. If you get the sauce right, half your job is done. Marinade the chicken with ginger garlic, salt, pepper and other ingredients, wrapped up in a plastic to refrigerate. All that is left to do after this is grill it, MULTIPLE TIMES! Not to forget a side of charred pineapples that makes the Huli Huli chicken even more enticing. You could also serve it on a bed of white rice along with some grilled bell peppers and zucchini.
