For the non-vegetarian part of India, there is perhaps nothing more exciting than indulging in a hearty bowl of chicken curry. And when you have endless options on the table, you are obviously spoilt with choice.  Chicken is undoubtedly one of most popular meats among non-vegetarians. Its versatility speaks much in the form of some of the juiciest appetisers and rich Indian curries. Another amazing example of sumptuous chicken curry is Kadhai chicken. An extremely popular chicken curry at restaurants as well as dinner parties at home, kadhai chicken is loved for its tantalising flavour, and got its name from the cooking technique, which uses 'kadhai' (wok) to make the feisty curry. And the best part is that one can cook paneer and mushroom too with the same technique.  

Kadhai chicken has marinated chicken peices, fried and added to sautéed onion-tomato mix with spices in a wok. The spices such as chilli powder, turmeric powder, garam masala and kasuri methi lends a heavenly flavour to the curry, which is cooked for about 10-15 minutes and served with a generous garnishing of cream on top. What makes this kadhai chicken different is the addition of special kadhai masala which is made with dry roasted red chilies, peppercorns, jeera, coriander seeds, fennel seeds.
