Gulkand is a sweet preserve of rose petals which are made into jam or syrups. Mostly gulkand is synonymous with paans (betel leaves) as it provides a rich flavour to it. Similarly, the use of gulkand in shrikhand imparts a delicate, flavourful touch to the dessert that makes it all things irresistible. The oozing rosy flavour of the dessert makes it one of a kind. Shrikhand is probably one of the easiest desserts that you can ever make. It only needs a fistful of ingredients and a couple of minutes. If you want to get your hands on one, here’s the recipe for shrikhand that you can make at home.

Ingredients:

  • 2 cups full-fat Greek yogurt
  • ¼ cup gulkand
  • 2 tsp rose water
  • ¼ cup granulated or powdered sugar
  • 1 tsp ground cardamom
  • Pistachio, garnishing

Preparations:

1. Take a large bowl and put a strainer above it. Then spread a muslin cloth above the strainer and add yogurt into it. Tightly seal the cloth and leave it overnight. This will remove the excess whey.

2. This will further result in homemade hung curd. Transfer that hung curd into a bowl with sugar, gulkand, rose water, cardamom powder, and whisk it well until the sugar is completely dissolved and the curd becomes creamy in texture.

3. Pour the shrikhand into the desired dessert bowls and garnish it with pistachios.
