Savoury Jam On Bread? Now is the time to try this red onion marmalade. It is a simple condiment dip that goes well as a side dish. This sweet and salty marmalade is similar in texture to onion jam. You can use it on a slice of bread, toasted baguette, or with a burger. The taste of caramelized onions cooked along with garlic, brown, apple cider gives an exciting twist to this dip. This onion marmalade recipe is simple to make; however, the process is a little weepy as you need to chop some onions.

Ingredients:

  • 4 tbsp unsalted butter
  • 2 tbsp olive oil
  • 500 gm red onion (thinly sliced)
  • 5-6 garlic cloves (grated)
  • 1 tsp freshly ground black pepper
  • 1 tsp red chilli flakes
  • ½ cup brown sugar
  • 1 cup apple juice, or you can take ½ cup apple cider vinegar
  • ½ cup red wine vinegar, or you can take 1 cup red wine
  • Salt, as per taste

How to make onion marmalade:

  1. To begin with, peel and wash the onion, slice them into half-moons about ¼ inch thick.
  2. Take a heavy bottom pan or kadhai. Heat some oil and butter in it. Add sliced onions and grated garlic.
  3. Saute them at low heat, stirring from time to time until they turn golden pink in colour. You want the onions to soften rather than frying.
  4. It takes at least 10-15 minutes. Keep stirring to avoid bottom sticking.
  5. After continuous sauteing, add salt, black pepper, chilli flakes, and brown sugar.
  6. Again stir this. Now add apple juice and red wine vinegar. Cover the pan and cook for about 15-20 more minutes.
  7. If you think at this stage you may see a lot of liquid, don’t worry. It all will evaporate and convert into a lovely sticky sauce of marmalade.
  8. Lower the flame and stir from time to time. Swipe the spoon all over the bottom to avoid sticking. Again, don't rush; it takes around 20-25mintues.
  9. The onion marmalade is ready, and the onion turns rich dark brown and shiny. Remove the pan from the flame.
  10. Take a clean, sterilized, airtight glass jar. Once the marmalade is cool, transfer this to a container.

Your onion marmalade is ready. You can keep this in the fridge and eat it within 2 to 3 weeks.
