Ingredients

  • 3 cups kale 
  • 3 potatoes ( Large sized )
  • 1 onion ( Large sized )
  • 4 cups vegetable stock, chicken stock, or water
  • 1 clove garlic
  • 5 tablespoons butter
  • 1 teaspoon lemon juice
  • Salt and pepper to taste
  • Whipped cream

Method

  • Start with cutting stems of kale and roughly chopped them.
  • Roughly chopped potatoes and onions.
  • Take a large saucepan, add butter and turn the flame to medium heat. Add onions and potatoes and fry until golden brown for 5-8 minutes.
  • Sprinkle it with salt and pepper. 
  • Add 4 cups of vegetable stock, chicken stock, or water.
  • Put the lid on the pan and cook the soup for 8-10 minutes. The soup is ready when the potatoes are easy to cut with a fork and when the kale turns tender and dark green.
  • Add lemon juice or vinegar. Add a spoonful of whipped cream at last and mix well. Season your soup with ground black pepper. 
  • Also, add more stock or water if you want it to have a thinner consistency. Serve hot. 

Tip: To make this soup healthier, you can add 2 egg yolks to it.
