There are a good amount of fibres and proteins found in kale which keeps the gut healthy and stimulates metabolism. This green vegetable also contains calcium, vitamins, minerals, and is full of antioxidants. Making potato kale soup is a great way to add greens to your diet.

  • 3 cups kale 
  • 3 potatoes ( Large sized )
  • 1 onion ( Large sized )
  • 4 cups vegetable stock, chicken stock, or water
  • 1 clove garlic
  • 5 tablespoons butter
  • 1 teaspoon lemon juice
  • Salt and pepper to taste
  • Whipped cream


  • Start with cutting stems of kale and roughly chopped them.
  • Roughly chopped potatoes and onions.
  • Take a large saucepan, add butter and turn the flame to medium heat. Add onions and potatoes and fry until golden brown for 5-8 minutes.
  • Sprinkle it with salt and pepper. 
  • Add 4 cups of vegetable stock, chicken stock, or water.
  • Put the lid on the pan and cook the soup for 8-10 minutes. The soup is ready when the potatoes are easy to cut with a fork and when the kale turns tender and dark green.
  • Add lemon juice or vinegar. Add a spoonful of whipped cream at last and mix well. Season your soup with ground black pepper. 
  • Also, add more stock or water if you want it to have a thinner consistency. Serve hot. 

Tip: To make this soup healthier, you can add 2 egg yolks to it.
