Mushroom Kombu Barthad is a coorgi dish highly enjoyed in the significant parts of Karnataka. This is a traditionally simple Kodava dish that retains its natural and authentic flavours. This spicy dish is coated in essential Indian ingredients like chillies, onions, garlic and cooked with coconut vinegar (full of nutrient values and a substitute for apple cider vinegar). Ingredients you need:

  • 10-15 mushroom buttons (sliced in half)
  • 3 tbsp oil
  • 2 whole red chilli
  • ½ tsp cumin seeds
  • 3-5 curry leaves
  • 3-5 green chilli (slit cut)
  • 1 large onion (finely chopped)
  • 2 tsp garlic paste
  • 1 tsp coriander powder
  • ¼ tsp turmeric powder
  • 4-5 tsp coconut vinegar
  • Salt and black pepper (as taste)

How to make Kombu Barthad?

  1. Take a pan, heat the oil in it. Once it is hot enough, break the dried red chilli into it, add cumin seeds, curry leaves for a few seconds, around 10-15 seconds.
  2. Add green chillies, onions and sauteed them for a while. Keep stirring them.
  3. Add the garlic paste and mushrooms, mix well gently.
  4. Now add all the powdered spices, i.e. coriander powder, turmeric, salt, and pepper; continue to stir fry them.
  5. Time to add coconut vinegar to it, give a final stir, and cook them; the mushrooms separate the oil for around 10-12 minutes.

Garnish it with fresh coriander leaves, and serve Kombu Barthad with rice or roti.
