Carrots are good for our health in general since they contain fibres, calcium and vitamins. That is why it is important to include them in our diet in order to enjoy all of the health benefits.

Here is how you can make perfect carrot cupcakes.


  • ¼ cup coconut oil
  • 1 ½ whole wheat flour
  • 1 ½ cups of grated carrots
  • 1 teaspoon cinnamon
  • ½ teaspoon of cloves
  • ½ teaspoon nutmeg
  • ½ teaspoon of salt
  • 2 tablespoons maple syrup
  • 3 tablespoons flaxseed
  • 1 teaspoon baking powder
  • 1 ½ teaspoon baking soda 
  • 1 cup walnuts ( chopped )
  • 1 cup raisins
  • ½ cup apple sauce
  • ½ cup of sugar


  • Preheat the oven at 350° F.
  • Mix 3 tablespoons of flax seed with half a cup of warm water. Whip this and set it aside.
  • Combine whole wheat flour, cloves, baking soda,  baking powder, cinnamon, sugar, nutmeg and salt in a large mixing bowl. Mix the ingredients gently until smooth.
  • Take another bowl, pour the flax seed water and add apple sauce, coconut oil, maple syrup, carrots, walnuts and raisins. Then carefully mix the wet ingredients in the dried ones until the batter is well combined, but don’t mix too much.
  • Put the batter in the cupcake mould. Bake at 350° F for about 35 minutes or until the top of the cupcakes turns brown. Let the cupcakes cool for at least 10 minutes before removing them from the mould. ( you can also use a lightly greased baking sheet instead of a cupcake mould ).

Enjoy these soft, sweet and healthy cupcakes with whipped cream.
