Morocco, a North African country is known for quite a lot including its rich delicious food. Don’t leave Morocco without trying its popular breakfast, Mseman. A traditional flatbread, Msemen is relished not only by the people of Morocco but also in many other countries such as Algeria and Tunisia. It is a popular tea-time snack that indulges one in its fluffy, crispy thick smoothness and flavour. Moroccan Msemen is sure to win over your heart. 

Find below a step-by-step method to make it at home. 



  1. 1 cup semolina 

  2. 1 cup milk 

  3. 2 tablespoon dry yeast 

  4. A pinch of salt 

  5. 1 tablespoon sugar 

  6. 2 cup atta/ fine flour 

  7. 1 tablespoon sugar 

  8. ¼ teaspoon yeast 

  9. 1 cup warm water (more if needed) 

  10. 1 cup vegetable oil 


Method for preparation- 

  1. For cooking the msemen, take one cup vegetable oil and semolina. Now, take a pan and add fine flour, half cup semolina, granulated sugar, salt, yeast and oil. 

  2. Now knead the dough for about 10 minutes.After the dough is ready, keep it tightly covered aside. 

  3. After, make big balls out of the dough. If possible, use your hands instead of a rolling pin to flatten it on a rolling board.  

  4. Make sure you grease the hands as well as the board. 

  5. On the flattened dough, grease again with oil and add the remaining semolina into it. 

  6. Fold it and give a square shape to your msemen. 

  7. Put a flat pan on the stove.Grease it with oil n put your rolled dough on it 

  8. Make sure to rotate it so that it can get evenly cooked from the sides. 

  9. Msemen is ready to relish!
